It’s nights like these when the air fryer is my best friend. These air fryer-roasted potatoes are on the table in just 20 minutes and they turn out just as crispy and satisfying. 

Serve easy air fryer potatoes as a quick side dish during the week, or use this recipe to save oven space over the holidays. Anytime you air fry them, it’s a win-win. Here’s why you will love this recipe:

Make Ahead

  • To Refrigerate: Cooked potatoes can also be kept airtight in the fridge for 4-5 days.
  • Freezing: Seal these air fryer roasted potatoes in an airtight container or freezer bag and store them frozen for up to 6 months. Thaw overnight before reheating cooked potatoes as described below.
  • To Reheat: I recommend reheating thawed roasted potatoes in the air fryer at 400ºF for a few minutes, or until warm and re-crisped.

  1. Cut potatoes into bite-sized pieces, about 1/2” to 3/4” thick and place in a medium mixing bowl. Drizzle with olive oil and sprinkle on the seasonings. Toss to combine and coat in oil and seasonings.

  2. Transfer potatoes to your air fryer basket in a single layer and Air fry at 400˚F for 18-20 minutes, flipping and tossing halfway. Air fry until potatoes are golden brown and crisp on the outside and tender when pierced with a fork. Garnish with parsley and serve.
